HOMEMADE APPLESAUCE




Applesauce is so very easy to make.  If you go to get apples from a farm in the Fall you may be able to get a bushel of apples you can store  for the Winter and Spring.

You need some brown sugar or White sugar which ever you prefer you can use a sugar substitute also.  A couple of lemons peels or lemon juice some Cinnamon stick and  a little vanilla,

Applesauce can be made using peeled or unpeeled apples.  The apples I like to use are, Granny Smith, Macintosh, Golden delicious and Fuji apples. Apple sauce is good eaten either hot or cold and it goes real good with pork dishes,

After peeling and coring the apples in a large pot then add 1 cup of water bring to a boil  and sugar cinnamon and sugar with lemon peels  but remove after boiling.  I would then put in a blender and blend to desired consistency.

HOW TO MAKE A JUICY ROASTED CHICKEN


Many people use a Beer can to sit the chicken on, this gives the chicken a beer taste also, because the beer boils and sends the beer throughout the bird. I have been using these upright chicken racks to prop my bird up and I get wonderful results.  Look how golden brown they are and believe me it is extremely tender and juicy.

First, I wash the chicken inside and out.  Then I make sure there are no packages inside with the neck and livers and gizzards etc.  I then season the chicken with my favorite  seasoning Kick'N Chicken, I usually rub with olive oil or butter first before adding the seasoning. I bake the chicken in a 325 degree oven then let the heat do its job for about 45 minutes. I also use a meat thermometer and make sure the thermometer registers 160 that tells me the chicken is ready. Your roasted chicken is much easier to baste this way to assure a golden brown Bird.







These stainless steel racks can be easily cleaned by hand or in the dishwasher and can be stacked together for easy storage. These can be found in any kitchen outlet.

AVOCADO SEED TEA


YOU WILL BE AMAZED!  After you have  finished eating the flesh of the avocado, set the seed aside to dry.  When it is dry, it has a skin much like that of an onion, you can peel that off and you have the raw seed.  Take a knife and slice the seed so that it can go into the blender, the seed is white or beige at this stage. You will be surprised at how easily the seed slices,

I usually wait until I have at least 4 or 5 seeds at a time.






OK! after you have the seeds sliced, put them in the blender or food processor and puree until it becomes a powder, then if you watch carefully you will see the oxidation turn the powder into a rich red color Amazing!


Finally, it is ready to be steeped for tea, or you can store it in an air tight
container.  In the pic to the right you can see two small items you can fill with the tea and place in boiling water until ready to drink.  The taste is different but nothing you can;t adjust to.  I like to use a little honey and the taste is really good to me.  Try it you will like it, just think of how good it is for your body.  I also noticed that my finger nails were growing long and strong and my hair was very shinny and healthy feeling.  Look this up and find out all the many values the Avocado Seed has!

Something New in Healthy Cooking "Cauliflower Rice" and "Mashed Potatoes"




Yes "Cauliflower rice" This is very healthy and will easily take the place of
real rice.  If you are looking for a different way of looking to lose weight then you need to look into this. It is so easy to make just get a regular cheese greater or a food processor that you would pulse a few times.





Mashed potatoes is another great creation for this versatile vegetable.  I swear you will not be able to tell the difference, To make it is so simple, you would boil until very tender add butter salt and pepper to taste then you add half & half then with a hand mixer mix until smooth and creamy just like mashed potatoes. Try it and you will be WOWED!

Company Coming????

Yeah you have company coming, don't worry find out how many and hurry to the store to get some peppers yellow, orange, green and red.
This is the perfect dish for company.  Everyone gets and individual pepper that is a complete dinner within itself.  Each pepper is stuffed with left over rice or whatever grain you prefer. ground beef is the perfect filler with peas carrots and corn, onions, mushrooms etc.

I try to find beautiful tri- color peppers (Large) with nice strong stems. I rinse them well and cut the tops off making sure that they are strong enough to stay on the pepper after stuffing.  I remove the seeds and take  small knife and clean out the white membrane, then rinse the pepper again removing any seeds that may still be there.

In a large bowl  mix all of the ingredients you want in your pepper it can be any left over you have or use fresh items such as corn, peas, carrots, with your rice and ground beef, get creative and colorful. Fill the peppers and place in a backing dish with a little tomato sauce in the bottom of the pan. Place the beautiful tops on the stuffed peppers at this point. Cook at 350 degrees until peppers are soften about 45 minutes then pour remaining tomato sauce and let simmer for another 10 minutes or so.

I guarantee your guest will love the presentation and their individual colorful paper.

Something Sweet To Eat!!!!

Banana Pudding:

This decadent is best served cold and is good any time of day or year.  I have not met anyone yet who has not liked this pudding, you have to not like bananas. When I make this desert, I use a dozen eggs and two boxes of the mini vanilla wafers.  I also use a double boiler two cups of sugar; it is very important to separate the egg yolks from the whites and make sure you do not get any yellow in the whites because if you do the whites will not fluff up when whipped.

When you prepare the baking dish you must layer with a layer of bananas and one layer of cookies continue this until all is finished the cookies and bananas. I usually let my eggs sit out until the area room temperature because the eggs just do better, they whip to a larger fluff, and they make the custard creamer.

In a large bowl mix the egg yolks and sugar   with a wooden spoon and 1/4 cup of flour until light in color and creamy the put in double boiler on stove mix in about a quart of half and half then with a wooden spoon stir until the custard thickens this will happen after the water boils about 10 minutes or so.  When it is thick enough remove from the stove off the fire and put about a tablespoon of vanilla extract in and stir really good.

NOW you can pour the custard all over the cookies and bananas until it soaks through,   Now you can take those egg whites in another large bowl take a hand mixer  mix on high speed until  it becomes white and fluffy much like cool whip or whip cream and the forms stiff peaks, at this point add about a table spoon of cream of tartar, tablespoon of sugar and a drop of vanilla you might want to whip a little more just to make sure all is mixed together.

At this point Whit I do is take a fork and design the tip in peaks before I put it in an oven at about 400 degrees for 10 or 15 minutes just until the peaks start to brown.  No longer than that because it will burn, and you don't want that.  Take your pudding out of the oven and refrigerate until set about 4 hours.  Enjoy your banana pudding...  Enjoy your Banana Pudding!!!!!





Beans, Beans, Beans

Beans Beans Beans good for your Heart, the more you eat the more you fart.  Lol the song we use to sing as children.  I like beans and my favorite bean is the Navy bean.  People say that you should soak them in cold water over night but I like to run warm water over them and let them sit for at least 1 hour the while they are sitting I like to have my pot ready with some smoke turkey meat for seasoning.

I also like to use Rotel  because it adds some heat and it seasons with green pepper and onions .  I use chicken broth for the liquid with just a small amount water.  I cut up lots of onions. Sometimes I cook the beans in a crock pot if I am cooking it overnight.

When the beans are soft I take half from the pot put it in the food processor and puree so that when you return it to the pot you now have the beans in a gravy  which make the texture more like a thick soup.  This is very tasty and is wonderful with some hard crusty bread.
 

Something Tasty For a Rainy Day

Hey!! This blog will hopefully help you decide on what to cook for the family on a rainy day!

I cut into thin strip Rib Eye beef, White Onions, Green Peppers. I also used Asian seasoning, Worcestershire Sauce, Balsamic Vinegar , Red Pepper flakes, Salt and Pepper to taste.  I also complimented the dish with White Rice but you can use a number of other things such as Couscous,  Egg noodles, Orzo or whatever you like, plain is good too.

 Instructions:

 Cut up your vegetables like the onions and green peppers. Slice them as thin as you would like . prepare a large skillet or a dutch oven with oil just a little  coating the bottom of the pan.  Then
 dust the green peppers and onions with corn starch put in pan cover the sweat the vegetables and the liquid the onions make in the pan will develop a sauce. the meat you can start seasoning with the vinegar Worcestershire sauce Asian seasoning pepper flakes.  When the meat is cooked (browned) you can mix it with the vegetables and simmer until all is done.  Make sure you taste to make sure no additional seasoning is needed,  Wait for your rice or pasta is done, then plate up and enjoy!
