Something Sweet To Eat!!!!

Banana Pudding:

This decadent is best served cold and is good any time of day or year.  I have not met anyone yet who has not liked this pudding, you have to not like bananas. When I make this desert, I use a dozen eggs and two boxes of the mini vanilla wafers.  I also use a double boiler two cups of sugar; it is very important to separate the egg yolks from the whites and make sure you do not get any yellow in the whites because if you do the whites will not fluff up when whipped.

When you prepare the baking dish you must layer with a layer of bananas and one layer of cookies continue this until all is finished the cookies and bananas. I usually let my eggs sit out until the area room temperature because the eggs just do better, they whip to a larger fluff, and they make the custard creamer.

In a large bowl mix the egg yolks and sugar   with a wooden spoon and 1/4 cup of flour until light in color and creamy the put in double boiler on stove mix in about a quart of half and half then with a wooden spoon stir until the custard thickens this will happen after the water boils about 10 minutes or so.  When it is thick enough remove from the stove off the fire and put about a tablespoon of vanilla extract in and stir really good.

NOW you can pour the custard all over the cookies and bananas until it soaks through,   Now you can take those egg whites in another large bowl take a hand mixer  mix on high speed until  it becomes white and fluffy much like cool whip or whip cream and the forms stiff peaks, at this point add about a table spoon of cream of tartar, tablespoon of sugar and a drop of vanilla you might want to whip a little more just to make sure all is mixed together.

At this point Whit I do is take a fork and design the tip in peaks before I put it in an oven at about 400 degrees for 10 or 15 minutes just until the peaks start to brown.  No longer than that because it will burn, and you don't want that.  Take your pudding out of the oven and refrigerate until set about 4 hours.  Enjoy your banana pudding...  Enjoy your Banana Pudding!!!!!
